Method
- Place chicken in the crock pot. Add pineapple chunks with juice, teriyaki sauce, garlic, ginger, and soy sauce.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- In the last 30 minutes, mix cornstarch and cold water. Stir into crock pot to thicken.
- Shred or slice chicken and return to sauce.
- Serve over rice or noodles. Garnish with green onions and sesame seeds.
Notes
Use canned pineapple, not fresh, to prevent over-tenderizing the chicken.
Don’t skip the cornstarch step; it makes the sauce perfectly thick.
Store leftovers in an airtight container in the fridge for up to 3 days.
