Ingredients
  

  • 2 lbs Boneless skinless chicken thighs Or breasts
  • 1 can Pineapple chunks 20 oz with juice
  • 0.75 cup Teriyaki sauce Store-bought or homemade
  • 2 cloves Garlic Minced
  • 1 tsp Ginger Grated optional
  • 1 tbsp Cornstarch For thickening
  • 2 tbsp Cold water For slurry
  • 1 tbsp Soy sauce Optional
  • – – Green onions For garnish
  • – – Sesame seeds For garnish
  • – – Cooked rice or noodles For serving

  • 1 Mixing Bowl For sauce slurry

Method
 

  1. Place chicken in the crock pot. Add pineapple chunks with juice, teriyaki sauce, garlic, ginger, and soy sauce.

  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
    Cover the crock pot with its lid and set it to LOW for 6–7 hours for maximum tenderness. If you're short on time, HIGH for 3–4 hours also works
  3. In the last 30 minutes, mix cornstarch and cold water. Stir into crock pot to thicken.
  4. Shred or slice chicken and return to sauce.

  5. Serve over rice or noodles. Garnish with green onions and sesame seeds.

Notes

Use canned pineapple, not fresh, to prevent over-tenderizing the chicken.
Don’t skip the cornstarch step; it makes the sauce perfectly thick.
Store leftovers in an airtight container in the fridge for up to 3 days.
