  • 3 ripe bananas mashed
  • 1/2 cup butter melted
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt

Method
 

  1. Preheat oven to 325°F (165°C). Grease a 9x5 inch loaf pan.
  2. Mash bananas in a mixing bowl until smooth.
  3. Add melted butter, sugar, eggs, sour cream, and vanilla. Stir until combined.
  4. In another bowl, whisk flour, baking soda, and salt.
  5. Fold dry ingredients into wet ingredients until just combined. Do not overmix.
  6. Pour batter into greased loaf pan.
  7. Bake for 60 minutes, or until a toothpick inserted in center comes out clean.
  8. Allow to cool for 10 minutes before slicing and serving.
