- Preheat oven to 325°F (165°C). Grease a 9x5 inch loaf pan.
- Mash bananas in a mixing bowl until smooth.
- Add melted butter, sugar, eggs, sour cream, and vanilla. Stir until combined.
- In another bowl, whisk flour, baking soda, and salt.
- Fold dry ingredients into wet ingredients until just combined. Do not overmix.
- Pour batter into greased loaf pan.
- Bake for 60 minutes, or until a toothpick inserted in center comes out clean.
- Allow to cool for 10 minutes before slicing and serving.

Best made with very ripe, spotted bananas for maximum sweetness.
