Ingredients
  

  • 1 bag Frozen diced potatoes 30 oz or hash browns
  • 4 cups Chicken broth
  • 8 oz Cream cheese Cubed and softened
  • 2 cups Shredded cheddar cheese Sharp recommended
  • 1 Ranch seasoning packet 1 oz dry mix
  • Salt and pepper To taste

Equipment

  • 1 Slow Cooker 4–6 qt recommended
  • 1 Whisk or spoon For stirring cheese

Method
 

  1. Spray crock pot with nonstick spray or use a liner
  2. Add potatoes, broth, ranch seasoning, salt, and pepper
  3. Place cubed cream cheese on top
  4. Cover and cook on LOW 6–7 hrs or HIGH 3–4 hrs
  5. Stir well and add cheddar cheese 30 minutes before done
  6. Stir again until smooth and creamy before serving
  7. Garnish with green onions or extra cheese, if desired

Notes

  • this version is rich and flavorful on its own
  • For a thicker soup, mash some of the potatoes or stir in instant mash
  • Spice it up with jalapeños, hot sauce, or pepper jack cheese
  • Freezes well, just cool fully and reheat slowly with a splash of broth
