Method
- Add chicken breasts to crock pot with rice, broth, onions, garlic, marjoram, salt, and pepper.
- Cover and cook on high for 4 hours or low for 6–7 hours.
- During the last 30 minutes, add broccoli and top with cheddar cheese.
- Switch to warm and let sit until broccoli softens and cheese melts.
- Shred chicken if desired and stir before serving.
Notes
- You can substitute chicken thighs for the breasts, use 4 thighs in place of 2 large breasts.
- Add cream of mushroom soup or sour cream if you prefer a thicker, richer consistency.
- Frozen broccoli can be used but should be added during the last hour of cooking.
- For extra crunch, garnish with additional fried onions just before serving.
