Crock Pot Chicken Divan

Ingredients
  

  • 2 Chicken breasts Boneless skinless
  • 1 cup Brown rice Uncooked not quick-cooking
  • 1 quart Chicken stock Or broth
  • 2 tbsp Garlic Minced about 4 cloves
  • 2 tsp Marjoram Dried
  • ½ tsp Black pepper Freshly ground
  • ½ tsp Salt More to taste
  • 1 cup Cheddar cheese Shredded sharp
  • 2 cups Broccoli florets Fresh or frozen
  • cups Fried onions Store brand or Durkee

Equipment

  • 1 Crock Pot / Slow Cooker 6-quart recommended
  • 1 Cutting Board For prepping chicken & garlic
  • 1 Sharp Knife To cut chicken and broccoli
  • 1 Measuring Cups For broth, rice, and cheese
  • 1 Wooden Spoon To stir before serving

Method
 

  1. Add chicken breasts to crock pot with rice, broth, onions, garlic, marjoram, salt, and pepper.
  2. Cover and cook on high for 4 hours or low for 6–7 hours.
  3. During the last 30 minutes, add broccoli and top with cheddar cheese.
  4. Switch to warm and let sit until broccoli softens and cheese melts.
  5. Shred chicken if desired and stir before serving.

Notes

  • You can substitute chicken thighs for the breasts, use 4 thighs in place of 2 large breasts.
  • Add cream of mushroom soup or sour cream if you prefer a thicker, richer consistency.
  • Frozen broccoli can be used but should be added during the last hour of cooking.
  • For extra crunch, garnish with additional fried onions just before serving.
