- Place raw chicken in the crock pot.
- Add white beans, green chiles, onion, garlic, chicken broth, cumin, paprika, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken and shred with two forks.
- Return shredded chicken to the pot.
- Stir in cream cheese and lime juice, letting cream cheese melt and combine.
- Optional: Leave the lid off for 15–30 minutes to thicken slightly.
- Serve hot with your favorite toppings.
Notes
Mash some beans to naturally thicken the chili without cream.
Cream cheese adds richness but is optional for dairy-free versions.
Top with jalapeños for added spice or lime for brightness.
