Ingredients
  

  • 1.5 lbs Boneless chicken breasts or thighs
  • 2 cans White beans drained cannellini or northern
  • 1 can Diced green chiles 4 oz not drained
  • 1 small Onion finely diced
  • 3 cloves Garlic minced
  • 3 cups Chicken broth low-sodium
  • 1 tsp Ground cumin
  • 0.5 tsp Smoked paprika
  • 1 Lime juiced
  • 4 oz Cream cheese softened optional
  • Salt and pepper to taste
  • Toppings optional avocado, sour cream, lime, cheese, jalapeños

Equipment

  • 1 Crock Pot Slow Cooker 6-quart recommended
  • 2 Forks For shredding chicken
  • 1 Mixing Bowl (optional) For mashing beans if desired

Method
 

  1. Place raw chicken in the crock pot.
  2. Add white beans, green chiles, onion, garlic, chicken broth, cumin, paprika, salt, and pepper.

  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Remove chicken and shred with two forks.
  5. Return shredded chicken to the pot.
  6. Stir in cream cheese and lime juice, letting cream cheese melt and combine.
  7. Optional: Leave the lid off for 15–30 minutes to thicken slightly.
  8. Serve hot with your favorite toppings.

Notes

Mash some beans to naturally thicken the chili without cream.
Cream cheese adds richness but is optional for dairy-free versions.
Top with jalapeños for added spice or lime for brightness.
