- In a skillet over medium heat, cook the ground beef until browned. Break it apart as it cooks, and drain any excess grease.
- Add the cooked beef to your crock pot. Stir in Velveeta, cream cheese, shredded cheddar, Rotel, and seasonings.
- Cover and cook on LOW for 2–3 hours or HIGH for 1–1.5 hours, stirring occasionally until fully melted and creamy.
- Switch to “Keep Warm” to serve. Add a splash of milk or cream if the dip is too thick. Serve with chips, bread, or veggies!
Notes
- Make it ahead: Store in the fridge and reheat in your slow cooker when ready to serve.
- Customize with jalapeños, diced pickles, or different cheeses.
- Great served with tortilla chips, slider buns, veggies, or waffle fries.
