Method
- Place chicken in the bottom of the crock pot.
- Pour pineapple chunks (with juice) over the chicken.
- Add BBQ sauce and sprinkle garlic powder, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Shred chicken in the pot or serve thighs whole with the sauce on top.
Notes
Swap pineapple chunks with crushed pineapple for a saucier finish.
Add a pinch of chili flakes for a kick of heat.
Great served over rice, in buns, or in lettuce wraps.
