Ingredients
  

  • 1.5 lbs Boneless skinless chicken thighs or tenders Fresh or frozen
  • 1 15 oz Can pineapple chunks Include the juice
  • 0.75 cup BBQ sauce Any favorite variety
  • 0.5 tsp Garlic powder
  • 0.5 tsp Smoked paprika optional For added flavor depth
  • Salt and black pepper To taste

Equipment

Method
 

  1. Spray or grease your slow cooker.
  2. Place chicken in bottom of crock pot.
  3. Add pineapple chunks and pour juice over chicken.
  4. Top with BBQ sauce and seasonings. Do not stir.
  5. Cook on LOW for 5–6 hours or HIGH for 3–4 hours until tender.
  6. Shred chicken and stir everything together.
  7. Serve over rice, on buns, or in tacos.

Notes

For a spicy twist, add chopped jalapeños or hot sauce before cooking.
Try honey BBQ, Carolina gold, or smoky bourbon BBQ sauces to switch up the flavor.
