Ingredients
  

  • For the Jerk Chicken:
  • 2 boneless skinless chicken breasts
  • 2 tbsp jerk seasoning store-bought or homemade
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • For the Pasta & Sauce:
  • 12 oz penne pasta
  • 2 tbsp butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes optional, for extra heat
  • 1/2 cup cherry tomatoes halved
  • 2 green onions sliced (for garnish)

Method
 

  1. Step 1: Cook the Pasta
  2. Bring a large pot of salted water to a boil.
  3. Cook the pasta according to package instructions until al dente.
  4. Drain and set aside.
  5. Step 2: Prepare the Jerk Chicken
  6. Rub the chicken breasts with jerk seasoning, lime juice, and olive oil. Let it marinate for at least 15 minutes (or overnight for more flavor).
  7. Heat a large skillet over medium-high heat and add a bit of oil.
  8. Cook the chicken for 4-5 minutes per side until fully cooked and slightly charred.
  9. Remove from heat, let it rest for a few minutes, then slice into thin strips.
  10. Step 3: Make the Creamy Jerk Sauce
  11. In the same skillet, melt butter over medium heat.
  12. Sauté onions until soft, then add minced garlic and cook for 30 seconds.
  13. Pour in heavy cream and chicken broth, stirring constantly.
  14. Add Parmesan cheese, salt, black pepper, and red pepper flakes. Stir until smooth.
  15. Step 4: Combine Everything
  16. Add the cooked pasta to the sauce and toss to coat evenly.
  17. Stir in cherry tomatoes and sliced jerk chicken.
  18. Garnish with green onions and extra Parmesan if desired.
  19. Step 5: Serve & Enjoy!
  20. Plate the pasta while warm.
  21. Serve with garlic bread, a fresh salad, or coconut rice for a complete meal.

Notes

  • For Extra Heat: Add more jerk seasoning or Scotch bonnet peppers.
  • Make it Lighter: Swap heavy cream for half-and-half.
  • Meat Alternatives: Try shrimp, tofu, or grilled vegetables instead of chicken.
